How to Cook the Perfect Sirloin Steak

Ingredients
- 2 x MyButchery sirloin steaks
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 2 cloves garlic, crushed
- 2 sprigs fresh rosemary
- 50g butter
Method
- Take the steaks out of the fridge 30 minutes before cooking to come to room temperature.
- Pat dry with kitchen paper and season generously with salt and pepper on both sides.
- Heat a heavy-based pan until smoking hot. Add a splash of oil.
- Sear the steaks for 2–3 minutes per side for medium-rare, basting with butter, garlic, and rosemary in the last minute.
- Rest the steaks on a warm plate for 5 minutes before serving.
- Slice against the grain and serve with your favourite sides.
Chef's tip: Always let your meat rest — it redistributes the juices and makes every bite more tender.
